Ingredients
- 1 1/2 cups plain flour
- 3 tsp baking powder
- 1/2 tsp salt
- 2 tbs sugar
- 1 1/4 cups milk
- 1 egg
- 3 tbs butter
- 3 bananas mashed overripe

Step 1Sieve the dry ingredients into a medium mixing bowl.

Step 2Make a well in the centre of flour, add blended milk and butter, and egg. Mix well.

Step 3Mash bananas with a fork, add to the mixture and fold in.

Step 4Cook pancakes in a pre-heated, lightly oiled frypan until bubbles rise in the surface.

Step 5Turn and cook the other side.

Step 6Serve with a sprinkle of caster sugar.
Recipe Notes
Use 1 cup milk for thick pancakes and 1½ cups for thin.
