Just like a cake ... but smaller! Always a great way to use up your over-ripe bananas.
Ingredients
- 2 1/2 cups self-raising flour
- 3/4 cup brown sugar
- 1 cup milk
- 1 egg
- 2 tbs margarine
- 1 tsp vanilla extract
- 2 bananas ripe
Method

Step 1Combine milk, egg, margarine, vanilla and bananas, and blend in a mixing jug.

Step 2Place flour and sugar in a large bowl. Mix in milk mixture.

Step 3Pour mixture into a greased muffin tray.

Step 4Bake for 20-25 minutes at 180C.

- 1 12-hole muffin pan
Recipe Notes
If you fill the muffin tins to the brim, you'll make 12 enormous muffins. I haven't iced them as they are great plain, but a cream cheese icing would work well, or a dusting of icing sugar. I have also added extras to these muffins in varying combinations - sultanas, coconut and choc chips.
