Ingredients

  • 500 g pumpkin chopped peeled
  • 3 bacon rashers chopped rindless
  • 6 garlic cloves unpeeled
  • 2 tbs oil
  • 400 g rigatoni pasta
  • 100 g fetta crumbled
  • 1/2 cup parsley chopped fresh
  • 1/2 cup mozzarella grated

Method

  • Step 1
    Preheat oven to 190C or 170C fan forced.
  • Step 2
    Place pumpkin, bacon, garlic and half of the oil in a baking pan. Toss to coat.

    Cook for 30-40 minutes, until pumpkin is tender. Squeeze garlic from skin.
  • Step 4
    Meanwhile cook pasta in a large saucepan of boiling, salted water according to packet directions.
  • Step 5
    Drain, reserving 1 cup of cooking liquid.
  • Step 6
    Combine pasta, pumpkin, bacon, garlic flesh, feta, parsley and remaining oil in a 10 cup ovenproof dish.
  • Step 7
    Pour over reserved liquid and top with mozzarella.
  • Step 8
    Bake for 25 minutes or until golden.
