I was taught this foolproof homemade pasta recipe by my sous chef. Using eggs and olive oil he was trained in pasta making by Gordon Ramsey. I regularly receive compliments on my pasta. - shankster

Ingredients

  • 600 g plain flour
  • 4 eggs whole
  • 7 egg yolks
  • 20 ml extra virgin olive oil

Method

  • Step 1
    Make a well in flour. Add eggs and oil to flour and combine with hands to form a ball.
  • Step 2
    Knead for approximately 10 minutes until dough is smooth and elastic.
  • Step 3
    Refrigerate for 30 minutes and then allow to rest out of fridge for 15 minutes.
  • Step 4
    Roll and cut into shapes of choice.
Recipe Notes

Use plain or strong flour.

If you have any left over, just hang it to dry and store for up to 3 weeks or coat in oil and freeze fresh.
