I was taught this foolproof homemade pasta recipe by my sous chef. Using eggs and olive oil he was trained in pasta making by Gordon Ramsey. I regularly receive compliments on my pasta.
Ingredients
- 600 g plain flour
- 4 eggs whole
- 7 egg yolks
- 20 ml extra virgin olive oil
Method

Step 1Make a well in flour. Add eggs and oil to flour and combine with hands to form a ball.

Step 2Knead for approximately 10 minutes until dough is smooth and elastic.

Step 3Refrigerate for 30 minutes and then allow to rest out of fridge for 15 minutes.

Step 4Roll and cut into shapes of choice.
Recipe Notes
Use plain or strong flour.
If you have any left over, just hang it to dry and store for up to 3 weeks or coat in oil and freeze fresh.
