Why do we love curried sausages?

As I’m Australian-born with a Sri Lankan background (and therefore very well versed in all things curry) my first exposure to curried sausages was confusion. 

It wasn’t like the curry that my mum made, that’s for sure – it was missing the spiciness and complex flavours. 

But after getting over my surprise, I was able to appreciate curried sausages not for what they’re lacking but for what they are: a simple, comforting and hearty meal that’s friendly on the budget and loved by kids and adults alike.

 While this differs slightly to the curried sausage dish enjoyed in the Commonwealth countries, the combination of flavours is likely related.

How to make best-ever curried sausages

Start by gently boiling the pork sausages for 15 minutes, then peel and cut in half. 

Meanwhile, cook the onion and apple in butter until golden and softened, then start the sauce with curry powder, flour and a bit of brown sugar. 

Add beef stock, chutney, sultanas and apricot jam and season. Next add milk, a tomato and a splash of coconut milk. 

Add the sausage pieces and simmer gently for 15 minutes for the flavours to combine.
