Sausages cooked and fried with onions, apple and curry powder. Good comfort food.

Ingredients

  • 1 kg thick sausages
  • 2 tbs white vinegar
  • 60 g butter
  • 2 onions small
  • 1 apple finely chopped small
  • 1 tbs curry powder
  • 2 1/2 cups beef stock (liquid)
  • 1 tbs cornflour
  • 1 tbs water

Method

  • Step 1
    Prick sausages and place in saucepan with enough cold water to cover, and add vinegar.
  • Step 2
    Bring to boil and simmer gently for 10 minutes.
  • Step 3
    Drain, cool and remove skins from the sausages.
  • Step 4
    Melt butter in a saucepan and fry onions, apple and curry powder.

    Stir until the onions are soft.
  • Step 6
    Add stock and bring to the boil while stirring.
  • Step 7
    Add sausages and simmer for 10 minutes.
  • Step 8
    Blend cornflour with the water and add to sausages, stirring until the mixture boils and thickens.
  • Step 9
    Serve with rice.
Recipe Notes

I use beef sausage but you could also use pork.
