This easy to make, family meal is loved by all. This zucchini slice simply tastes scrumptious and often after this dish is made, a quarter is gone before I even get a chance to serve it out.
Ingredients
- 3 zucchini
- 1 onion large
- 3 bacon rashers
- 1/2 cup olive oil
- 5 egg
- 1 cup self-raising flour
- 1 cup cheese grated
- 1 pinch salt and pepper
Method

Step 1Pre-heat oven to 180C and grease a 25cm square ceramic dish (if you do not have a square dish, a rectangular dish will do the same job).

Step 2Grate unpeeled zucchinis coarsely.

Step 3Finely chop onion and bacon and put into a large bowl.

Step 4Whisk eggs and add to onion and bacon.

Step 5Squeeze juices from zucchini and add to the large bowl.

Step 6Add remaining ingredients to the mixture and mix well.

Step 7Pour into well-greased dish. Bake in oven for 50 minutes or until golden on top.
Recipe Notes
I serve with my grandmother's homemade tomato sauce and the extra bit of flavour makes the dish taste sensational. Can make about 25 if used for finger food. Enjoy!
