This easy to make, family meal is loved by all. This zucchini slice simply tastes scrumptious and often after this dish is made, a quarter is gone before I even get a chance to serve it out. - 1230livy

Ingredients

  • 3 zucchini
  • 1 onion large
  • 3 bacon rashers
  • 1/2 cup olive oil
  • 5 egg
  • 1 cup self-raising flour
  • 1 cup cheese grated
  • 1 pinch salt and pepper

Method

  • Step 1
    Pre-heat oven to 180C and grease a 25cm square ceramic dish (if you do not have a square dish, a rectangular dish will do the same job).
  • Step 2
    Grate unpeeled zucchinis coarsely.
  • Step 3
    Finely chop onion and bacon and put into a large bowl.
  • Step 4
    Whisk eggs and add to onion and bacon.
  • Step 5
    Squeeze juices from zucchini and add to the large bowl.
  • Step 6
    Add remaining ingredients to the mixture and mix well.
  • Step 7
    Pour into well-greased dish. Bake in oven for 50 minutes or until golden on top.
Recipe Notes

I serve with my grandmother's homemade tomato sauce and the extra bit of flavour makes the dish taste sensational. Can make about 25 if used for finger food. Enjoy!
