Delicious vegetarian meal to make as a treat for lunch.
Ingredients
- 1 red onion halved
- 2 garlic cloves
- 2 carrots
- 2 zucchinis small
- 1 tbs vegetable oil
- 1 corn cob kernels
- 3/4 cup cottage cheese
- 1 1/2 cups rolled oats
- 2 tsp dried mixed herbs
- 3 tsp chilli sauce
- 2 eggs lightly beaten
- 3 sheets ready rolled puff pastry just thawed
- 1 tbs sesame seeds
Method

Step 1Using a food processor, coarsely grate the onion, garlic, carrot and zucchini.

Step 2Place a frying pan over medium-high heat and add oil.

Step 3Once to temperature, add the grated vegetables and corn kernels.

Step 4Cook stirring occasionally for 5 minutes, until the vegetables are soft.

Step 5Drain, and transfer to a bowl.

Step 6Add cottage cheese, oats, herbs, chilli sauce and half the beaten egg.

Step 7Season with salt and pepper and set to one side for 10 minutes.

Step 8Preheat oven to 220C.

Step 9Line 2 baking trays with baking paper.

Step 10Place a pastry sheet on a board and cut in half.

Step 11Spoon one sixth of the mixture along the long side of one of the halves. Brush the opposite edges with egg.

Step 12Roll up to encase the filling.

Step 13Cut the roll into thirds and place on prepared tray.

Step 14Repeat with remaining pastry and vegetable filling.

Step 15Brush tops of rolls with remaining egg and sprinkle with sesame seeds.

Step 16Bake for 15-20 minutes, until puffed and golden.
