A great tasting and rich white chocolate mud cake.
Ingredients
- 250g butter
- 250g CADBURY Baking White Chocolate Block
- 200ml water
- 1 1/2 cups caster sugar
- 1 3/4 cups plain flour
- 1 cup self-raising flour
- 2 eggs lightly beaten
- 1/2 cup sour cream
- 1 tsp vanilla essence
Icing
- 125g butter
- 125g CADBURY Baking White Chocolate Block
- 3/4 cup icing sugar
Method

Step 1Preheat oven to 150C.

Step 2Cake: Heat butter, sugar, chocolate and water in a saucepan and stir over low heat until well combined.

Step 3Sift both flours together and blend into chocolate mixture.

Step 4Stir in eggs, sour cream and vanilla.

Step 5Pour the mixture into a deep 20cm pan and cook for approximately 1-2 hours depending on your oven.

Step 6Icing: Cream together the butter and icing sugar, then add melted chocolate.

Step 7Spread icing over the cake.
Equipment
- 1 20cm springform pan
Recipe Notes
The icing makes enough to cover the sides and top of one big cake. If the icing gets too hard when spreading, microwave it for a few seconds.
Instead of sour cream you could use thickened cream, yoghurt or condensed milk, this just adds to the moistness of the cake.
Also great with white chocolate ganache.
