A log that is cut into slices to make small bites of sweetness.
Ingredients
- 200 g white chocolate melts
- 1/4 cup cream
- 20 g butter
- 1 cup Rice Bubbles
- 1/2 cup coconut
- 50 g dried apricots diced
- 1 tbs icing sugar *to serve
Method

Step 1Melt chocolate, butter and cream in the microwave until smooth. Stir regularly.

Step 2Add Rice Bubbles, coconut and apricots. Mix well. Chill.

Step 3Roll mixture into 3 logs. Wrap in baking paper and chill until solid.

Step 4Remove from fridge. If desired roll in icing sugar and slice into 1 cm thick slices.
Recipe Notes
You can also roll the logs in more coconut, cocoa or brown sprinkles.
