Who isn't obsessed with Virgin River at the moment? It was music to my ears to hear Season 5 is currently in production! I have to admit that my curiosity was piqued when Hope attempted to make hermit cookies in Season 4, but due to the repercussions of her accident, she couldn't quite remember the recipe. Well here is my version and they are perfect for enjoying with a cuppa along with a few more episodes of Virgin River.
Ingredients
- 170g sultanas
- 80g currants
- 270g plain flour
- 1/4 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp ground nutmeg
- 125g butter, softened
- 165g firmly packed brown sugar
- 1 egg
- 60ml milk
- 2 tsp vanilla extract
- 60g chopped walnuts
Method

Step 1Place sultanas and currants in a small heatproof bowl. Cover with boiling water and stand for 30 minutes. Drain.

Step 2Preheat oven to 180C/160C fan-forced. Line 2 large baking trays with baking paper.

Step 3Combine flour, spices and bicarbonate of soda with a large pinch of salt in a medium bowl.

Step 4Use an electric to beat butter and sugar until light and fluffy. Add egg, milk and vanilla and beat until just combined. Add flour mixture and beat on low speed until just combined. Stir in sultana mixture and walnuts.

Step 5Drop tablespoons, 4cm apart, onto prepared trays. Bake for 16-18 minutes or until golden. Cool on trays for 5 minutes. Transfer to a wire rack to cool completely. Serve.
