This simple vegetarian tray bake with cauliflower steaks and felafel is the perfect way to make dinner! Simply throw it in the oven and it's ready 30 minutes later. - Amira Georgy

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 1/2 tsp ground cumin
  • 2 garlic cloves, crushed
  • 2 large field mushrooms, stems trimmed
  • ½ cauliflower, cut into two steaks
  • 200g butternut pumpkin, cut into 1cm thick slices
  • 8 felafel
  • 200g cherry truss tomatoes, cut into small bunches
  • Hummus, to serve

Method

  • Step 1
    Preheat oven to 220C/200C fan-forced. Line a baking tray with sides with baking paper.
  • Step 2
    Combine oil, cumin and garlic in a small bowl. Place mushrooms, cauliflower and pumpkin on prepared tray and brush with three-quarters of the cumin mixture. Season. Bake for 20 minutes or until starting to brown.
  • Step 3
    Add felafel and tomato to tray and brush tomato with remaining cumin mixture. Bake for a further 10 minutes or until vegetables are tender and felafel is heated through.
