This simple vegetarian tray bake with cauliflower steaks and felafel is the perfect way to make dinner! Simply throw it in the oven and it's ready 30 minutes later.
Ingredients
- 2 tbsp extra virgin olive oil
- 1 1/2 tsp ground cumin
- 2 garlic cloves, crushed
- 2 large field mushrooms, stems trimmed
- ½ cauliflower, cut into two steaks
- 200g butternut pumpkin, cut into 1cm thick slices
- 8 felafel
- 200g cherry truss tomatoes, cut into small bunches
- Hummus, to serve

Step 1Preheat oven to 220C/200C fan-forced. Line a baking tray with sides with baking paper.

Step 2Combine oil, cumin and garlic in a small bowl. Place mushrooms, cauliflower and pumpkin on prepared tray and brush with three-quarters of the cumin mixture. Season. Bake for 20 minutes or until starting to brown.

Step 3Add felafel and tomato to tray and brush tomato with remaining cumin mixture. Bake for a further 10 minutes or until vegetables are tender and felafel is heated through.
