Roast pork with the skin rubbed in Vegemite.
Ingredients
- 500 g pork belly
- 1 tbs Bega Vegemite *to taste
- 3 tbs olive oil
- 3 garlic cloves diced
- 1/3 cup water
- 1 pinch allspice optional
Method

Step 1Preheat oven to 220C.

Step 2Wash pork and dry well with paper towel. Use a sharp knife to score the skin of the pork at 1cm intervals.

Step 3If using pork belly, cut part way through down the length of the meat side and rub with allspice.

Step 4Rub skin evenly with Vegemite. Place pork on a roasting tray. Poor oil around roasting tray, then add garlic and water.

Step 5Roast for 20-30 minutes per 500g. The first 20-30 minutes at 220C then 180C for remaining time, or until rind crackles.
Recipe Notes
My first try at this recipe was a success. Basically cook your pork the way you like, but replace the oil and salt rub with Vegemite.
Use any kind of pork for roasting.
