Baked potatoes brushed with Vegemite.
Ingredients
- 1 nadine potato
- 1 tbs Vegemite
Method

Step 1Peel and cut potatoes in half. Place in microwave dish and cook until just beginning to soften.

Step 2Remove from microwave and drain.

Step 3Scrape tops of potatoes with a fork and brush a thin film of Vegemite over potatoes.

Step 4Place in baking dish and bake at 180C until brown and crisp on the outside and soft and fluffy on the inside.
Recipe Notes
I always dry bake my food so there is no added fat in this recipe. I have also used the same method to cook sweet potato and pumpkin. Use any good quality baking potatoes.
