A basic vanilla biscuit.
Ingredients
- 125 g butter
- 1/2 cup caster sugar
- 1/4 tsp vanilla extract
- 1 egg
- 2 cups plain flour
- 1 tsp baking powder
- 1 egg
Icing
- 1 cup icing sugar
- 3 tbs milk
- 1 tsp lemon juice *to taste
Method

Step 1Line a baking tray and preheat oven 180C (160 fan forced).

Step 2Cream butter, sugar and vanilla.

Step 3Add egg slowly and beat well.

Step 4Add sifted flour and baking powder.

Step 5Place on floured board and knead slightly.

Step 6Cover the dough in a bowl and rest for 20-30 minutes in the fridge.

Step 7Roll small portions out, keeping the dough cool.

Step 8Cut shapes using a 4 cm dough cutter dipped in flour

Step 9Place on prepared tray. Brush lightly with egg to glaze and bake for 10-12 minutes.

Step 10Add lemon juice and milk to icing sugar until desired consistency is reached. Be careful not to make it too runny.

Recipe Notes
Use egg or milk.
Feel free to add colours to the icing.
