Put on the kettle, round up the family and enjoy a slice of this fluffy and delicious upside-down apple tea cake.
Ingredients
- 60ml caramel syrup, plus extra to serve
- 2 red delicious apples
- 125g butter, softened
- 215g caster sugar
- 2 eggs
- 2 tsp vanilla extract
- 300g self-raising flour
- 160ml milk
- Double cream, to serve

Step 1Preheat oven to 180C/160C fan forced. Grease the base and side of a 20cm round cake pan. Line base and side with baking paper.

Step 2Drizzle syrup over base of pan, then swirl to coat. Cut apples crossways into 5mm slices. Place 7 apple slices in base of pan. Coarsely chop remaining apple slices.

Step 3Use electric beaters to beat butter, sugar, eggs and vanilla in a bowl until light and creamy. Add flour and milk and beat until just combined. Fold in chopped apple. Pour mixture into pan and level top. Bake for 45 minutes or until a skewer inserted into the centre comes out with moist crumbs clinging.

Step 4Set cake aside in pan for 5 minutes to cool slightly before turning onto a large serving plate. Serve cake warm with extra syrup and cream.
