Similar to a chocolate fudge cake but with Christmas flavours instead.
Ingredients
- 250g ginger biscuits, crushed
- 1/2 cup walnuts, chopped
- 1/4 cup sherry
- 1/4 cup golden syrup
- 1/2 cup icing sugar
- 1/2 cup marmalade
- 125g butter, melted
- 1/2 tsp cinnamon sugar
- 1/2 tsp ground cloves
- 3/4 cup mixed peel
- 1/2 cup glace cherries, chopped
- 1/2 cup prunes, chopped
- 1 1/2 cup sultanas
Method

Step 1Place biscuits and nuts into large bowl.

Step 2Combine sherry, golden syrup, icing sugar, marmalade, butter and spices. Pour this mix over crushed biscuits and mix well.

Step 3Add dried fruit and mix together.

Step 4Spoon into a lined loaf tin, cover and chill for 24 hours before cutting. Store in fridge.
