This easy Tuscan salmon traybake is perfect for those nights when you want something nourishing but don't have time to cook. This dish is ready in just 25 minutes and most of the work is done in the oven!
Ingredients
- 4 x 125g salmon fillets with skin
- 1 tbsp extra virgin olive oil
- 2 tbsp chopped fresh oregano leaves, plus extra sprigs to serve
- 1 bunch broccoli, trimmed
- 300ml thickened cream
- 1 tbsp drained capers, rinsed
- 2 garlic cloves, crushed
- 1 tbsp tomato paste
- 80g (1/2 cup) drained semi-dried tomatoes, chopped
- Crusty bread, to serve
Method

Step 1Preheat oven to 200C/180C fan-forced. Grease a large baking dish.

Step 2Rub salmon with oil and half of the oregano. Season and place in dish with broccolini, skin-side up. Bake for 5 minutes.

Step 3Meanwhile, combine cream, capers, garlic, tomatoes, tomato paste and remaining oregano in a large jug. Season.

Step 4Turn salmon over. Pour cream mixture over salmon and bake for a further 7-8 minutes or until broccolini is tender and salmon is cooked to your liking.
