Janelle learnt this traditional recipe from her Nene. The pide is soft and fluffy and is filled with egg, homemade cheese and sujuk (a traditional Turkish sausage) before being baked in a woodfire oven, but if you don't have one of those, you can bake it in a normal oven. The entire dish is reminiscent of the abundant breakfasts in Turkey!
Ingredients
- 625ml warm water
- 4 ½ tsp dried yeast
- 2 tbs caster sugar
- 375ml Greek yoghurt
- 4 tbs olive oil
- 2 tbs salt
- 1125g plain flour
Filling (enough for 2 pide)
- 2 whole eggs
- ½ cup sliced sujuk sausage
- 1 cup mozzarella cheese
- ½ cup cheddar cheese
- ¼ cup grated haloumi cheese
Method

Step 1Prepare the dough and place the warm water, yeast and sugar in bowl of an electric mixer fitted with a dough hook. Set aside for 5 minutes or until frothy. Add combined yoghurt, oil and salt. Add flour and parsley. Mix for 5 minutes to form a soft dough.

Step 2Turn dough out onto a lightly floured bench and divide into 12 portions. Roll each portion into a ball and place on a lightly floured tray. Set aside in a warm place for 15 minutes.

Step 3Section the dough into equal portions and shape into an almond shape, pinching at each end.

Step 4Brush with egg and add cheese filling and sujuk and cook in the woodfire oven or normal home oven until edges are golden and cheese begins melting.

Step 5Once cooked, and dough is browning, crack eggs into the pide and top with extra cheese if wanted.

Step 6Allow the egg to cook and then remove from the oven.

Step 7Sprinkle with chilli flakes, some fresh parsley and enjoy by dipping bread into the yolks or slice into pieces.
