I made this recipe up about 4 years ago as a nice Christmas version to my usual bacon mini quiches. I have made them every Christmas since, and they have been a huge hit with my family, friends and colleagues.
Ingredients
- 500 g turkey roast diced
- 1 onion large finely diced
- 2 cups mozzarella grated
- 1/2 cup cranberry sauce
- 4 eggs beaten
- 4 sheets puff pastry frozen
Method

Step 1Preheat oven to 180C and lightly grease a shallow mini quiche or cupcake tray.

Step 2In a large frypan, slowly fry diced turkey and onion on a moderate heat until fragrant and onion is soft.

Step 3Take pan off the heat and add grated cheese. Allow to melt and combine.

Step 4Add cranberry sauce and combine. Allow to cool a little.

Step 5Add eggs and stir until combined.

Step 6Use a round cookie/scone cutter to cut enough rounds to fill each hole in the tray.

Step 7Fill each round of pastry with approximately 1 teaspoon of the mixture.

Step 8Bake for approximately 15 minutes or until lightly golden.

Step 9Repeat with remaining pastry and mixture.

- 3 12-hole cupcake pan
Recipe Notes
These are also great for storing in the freezer to use when unexpected guests come around. They will last for up to 3 months and all you need to do is reheat them in the microwave for a minute or two, or for a crispier flakey pastry in the oven for 5-10 minutes.
