A great way to use leftover turkey, these fritters are perfect for an easy dinner or for lunchboxes.
Ingredients
- 1 cup self raising flour
- 1 egg
- 1 cup milk
- Salt to taste
- Pepper to taste
- 500g chopped cooked turkey
- 1/4 cup grated cheese
- 1/2 diced onion
- 1/2 cup tinned corn
- 1/2 tinned asparagus
Method

Step 1Sift flour and salt.

Step 2Add whisked egg and milk mix til smooth.

Step 3Rest 1/2 hour.

Step 4Add ingredients and fry in olive oil both sides til brown.

Step 5Serve with cranberry sauce
