We took all the flavours we loved from a classic tuna mornay pasta bake and turned it into an easy cold salad.
Ingredients
- 400g spiral pasta
- 1 cup frozen peas
- 425g tin tuna in oil
- 1 tbs chives, chopped
- 2 shallots, chopped
- 1/2 iceberg lettuce, roughly chopped
Dressing
- 30g sachet tuna mornay mix
- 3/4 cup mayonnaise
- 2 tbs lemon juice
- Pinch of salt and pepper
Method
-
Step 1Cook pasta according to packet instructions until al dente. Drain and set aside to cool. Cook peas in boiling water for 2 minutes, then drain and refresh in cold water.
-
Step 2To make the dressing, whisk together ingredients in a small bowl. Season well.
-
Step 3Place pasta and peas in a large bowl and add dressing. Stir to combine. Drain tuna and add to bowl with chives, shallots and lettuce. Carefully toss to combine and coat ingredients in the dressing. Serve.
Recipe Notes
Cook peas in the microwave if you prefer. Be sure to refresh them in cold water once cooked so they keep their vibrant green colour.
