Ingredients

  • 1 tbs olive oil
  • 1 brown onion chopped
  • 1 red capsicum cut into pieces
  • 2 garlic cloves crushed
  • 600 g beef mince
  • 1 cup Leggo's tomato paste
  • 1 can kidney beans
  • 1 packet tortillas
  • 3/4 cup cheddar cheese shredded
  • 1 tub sour cream

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Heat oil in a large frying pan over medium heat, then add onion, capsicum and garlic and cook for about 3 minutes. Keep stirring.
  • Step 3
    Add mince and cook until the mince until browned. Add tomato paste and beans, and combine all together. Cook for another 5 minutes.
  • Step 4
    Using a springform pan to make the layers, layer a tortilla, then mince mixture and repeat until all tortillas and mince mixture has been used. Top layer must be a tortilla.
  • Step 5
    Top the tortilla with cheese and put into the oven until golden brown (about 30 minutes). Serve with a vegetable salad, or sour cream.

  • 22cm round springform pan
Recipe Notes
If you need more seasoning, you can add Vegeta powder for more taste.
