This makes a tasty lunch, or after school snack.
Ingredients
- 1 tbs olive oil
- 1 brown onion chopped
- 1 red capsicum cut into pieces
- 2 garlic cloves crushed
- 600 g beef mince
- 1 cup Leggo's tomato paste
- 1 can kidney beans
- 1 packet tortillas
- 3/4 cup cheddar cheese shredded
- 1 tub sour cream
Method

Step 1Preheat oven to 180C.

Step 2Heat oil in a large frying pan over medium heat, then add onion, capsicum and garlic and cook for about 3 minutes. Keep stirring.

Step 3Add mince and cook until the mince until browned. Add tomato paste and beans, and combine all together. Cook for another 5 minutes.

Step 4Using a springform pan to make the layers, layer a tortilla, then mince mixture and repeat until all tortillas and mince mixture has been used. Top layer must be a tortilla.

Step 5Top the tortilla with cheese and put into the oven until golden brown (about 30 minutes). Serve with a vegetable salad, or sour cream.

If you need more seasoning, you can add Vegeta powder for more taste.
