I made it and I don't want to part with or give it away...I have it hidden in my cupboard!
Ingredients
- 5 1/2 kg tomato ripe
- 1.8 kg onion
- 1.4 kg white sugar
- 4 tbs curry powder
- 6 tbs mustard powder
- 1 tsp cayenne pepper
- 750 ml white vinegar
- 1 cup salt
Method

Step 1Place tomatoes in a bowl and sprinkle with half the salt.

Step 2Slice onions thinly and place in another bowl, and sprinkle with remaining salt. Leave for 12 hours.

Step 3Drain off excess liquid from tomatoes and onions and place into a large heavy based pot with the vinegar.

Step 4Bring to boil and boil for 5 minutes.

Step 5Add rest of dry ingredients and simmer for approximately 2½ hours or until relish consistency is achieved. Allow to cool.

Step 6Pour into clean sterilised jars.
Recipe Notes
You can also thicken with cornflour and water once you feel the ingredients have broken down enough. I accidentally used extra hot cayenne pepper and I believe it was what made the relish. I was going to use a lesser amount to compensate but I'm so glad I didn't!
