Beautiful sauce for any pasta.
Ingredients
- 1 kg tomato fresh sliced
- 1 capsicum roughly chopped
- 1 onion diced
- 3 garlic clove crushed
- 1 green chilli sliced
- 1 red chilli sliced
- 2 tbs tomato paste
- 1/4 cup water
- 1 tsp balsamic vinegar
- 1 tsp basil *to serve
- 1 tsp parsley *to serve
- 1 tsp parmesan *to serve
Method

Step 1Add tomatoes, onion, garlic and chillies to a large saucepan.

Step 2Bring to the boil, then simmer for 40 minutes or until capsicums are softened.

Step 3Add water, vinegar and tomato paste.

Step 4Simmer for a further 5 minutes.

Step 5Mix through pasta of choice.

Step 6Top with fresh basil and parsley, and a sprinkle of Parmesan.
