Ingredients

  • 1 kg tomato fresh sliced
  • 1 capsicum roughly chopped
  • 1 onion diced
  • 3 garlic clove crushed
  • 1 green chilli sliced
  • 1 red chilli sliced
  • 2 tbs tomato paste
  • 1/4 cup water
  • 1 tsp balsamic vinegar
  • 1 tsp basil *to serve
  • 1 tsp parsley *to serve
  • 1 tsp parmesan *to serve

Method

  • Step 1
    Add tomatoes, onion, garlic and chillies to a large saucepan.
  • Step 2
    Bring to the boil, then simmer for 40 minutes or until capsicums are softened.
  • Step 3
    Add water, vinegar and tomato paste.
  • Step 4
    Simmer for a further 5 minutes.
  • Step 5
    Mix through pasta of choice.
  • Step 6
    Top with fresh basil and parsley, and a sprinkle of Parmesan.
