Ingredients

  • 3/4 cup mascarpone
  • 1/2 cup thickened cream
  • 1 tsp white sugar
  • 2 tbs instant coffee powder
  • 6 sponge finger biscuits
  • 30 g Flake chocolate bar
  • 4 fresh strawberries finely sliced
  • 1 cup water boiled

Method

  • Step 1
    Add the coffee granules to a large bowl and pour over boiling water, dissolve the coffee by stirring then set the bowl aside to cool for about 10 minutes.
  • Step 2
    In another bowl add in the mascarpone, cream and sugar and beat well with a whisk to combine, set aside.
  • Step 3
    Once the coffee is cool it is time to dip the biscuits. One at a time, fully submerge the sponge biscuits in the coffee for only 3 seconds then immediately break into 3 bits and place into the serving glass or bowl. Repeat again with another biscuit so there are 2 biscuits in each serving glass. Then top with the 3/4 of the cream mix, and repeat again with another 1 sponge finger for each glass. There will be a total of 3 biscuits per person.
  • Step 4
    Add in the remaining cream mix and then crumble over the flake. Top with the sliced strawberries and serve immediately.

Recipe Notes

You can prepare this dish in advance. It will store in the fridge for a couple of hours before you are ready to enjoy.
I normally use 1 Cadbury Flake bar which is about 30g.
