Ingredients

  • 12 digestive biscuits
  • 1 cup water
  • 2 tsp instant coffee granules
  • 2 tsp cocoa powder
  • 1 tbs whisky
  • 4 cup whipped cream cold
  • 2 tbs icing sugar sifted
  • 2 tsp vanilla sugar
  • 170 g thickened cream cold
  • 1 tbs cocoa powder *to decorate
  • 1 banana sliced *to decorate *optional

Method

  • Step 1
    Mix the water with the cocoa, coffee granules and whiskey.
  • Step 2
    Dip biscuits into the coffee mixture until well soaked and place two biscuits each into six individual-serve glass bowls.
  • Step 3
    Combine the whipped cream, sugar, vanilla and thickened cream until mixture is just thickened.
  • Step 4
    Divide the cream across the bowls.
  • Step 5
    Sift cocoa powder over the cream and top with banana, if using.
  • Step 6
    Alternately, caramelize 1 cup of sugar in a pan with ¼ cup of almonds.
  • Step 7
    Once cool, crush them in an electric crusher and sprinkle them over the cream instead of the cocoa.
  • Step 8
    Place in fridge for 1½-2 hours before serving.
Recipe Notes
I used vanilla powder.
