This is the tastiest apricot chicken I've ever made, and it's a great way to use up your leftover jam. Can be cooked in the oven or in a slow cooker.
Ingredients
- 1 kg chicken drumsticks
- 440 ml apricot juice
- 20 g French onion soup mix
- 5 tbs apricot jam
- 1 onion large sliced
Method

Step 1Preheat oven to 200C. Whisk soup and nectar together.

Step 2Place chicken in a casserole dish and layer sliced onion over chicken.

Step 3Place jam on top of chicken and onion and pour nectar mix over the top.

Step 4Cover and bake for approximately 1½-2 hours. Serve with rice or pasta.

Recipe Notes
You can replace the chicken for the jumbo turkey wings or chicken wingettes.
Homemade jam works best, mainly because it's chunky, but store bought works good as well.
I've also cooked this in a slow cooker, but it needs about 8-10 hours on low.
