Thai Chicken Noodle Soup

Ingredients

  • 1 L Campbell's Real Thai Soup Base
  • 1 tbs olive oil
  • 3 garlic cloves thinly sliced
  • 1/2 red capsicum deseeded cut into small pieces
  • 1 lemongrass stalk diced
  • 2 tsp lime juice
  • 400 ml cold water
  • 150 g vermicelli
  • 1 handful baby spinach fresh
  • 1/2 cup coriander fresh
  • 400 g barbecue chicken breast cut into small pieces

Method

  • Step 1
    Heat the oil in a large saucepan over medium - high heat, then add the garlic and lemongrass and cook for 1 -2 minutes, or until fragrant.
  • Step 2
    Add the stock then bring to the boil.
  • Step 3
    Then add noodles, lime juice, capsicum and cook until the noodles are cooked (1-2 minutes ).
  • Step 4
    Then add the water, chicken, coriander and bring to the boil again. Taste the soup and see if anything needs to be added.
  • Step 5
    Serve hot on its own and enjoy.

  • 1 saucepan with lid
Recipe Notes
The base of this soup tastes similar to a chicken laksa soup, so I added 400ml of water and it was good. The flavour was not too strong. And I added red capsicum instead of red chilli as my family does not eat much spicy food.
