A three cheese, onion and no boil potato bake that is bench-top to oven to table within an hour.
Ingredients
- 700 g potato peeled thinly sliced
- 2 onion medium thinly sliced
- 1 1/2 cup tasty cheese grated
- 1/4 tsp garlic crushed
- 75 g butter
- 2 tbs plain flour
- 1 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 pinch pepper
- 1/4 cup Swiss cheese
- 1 tbs parmesan cheese grated
Method

Step 1Preheat oven to 220C (200C fan forced).

Step 2Place alternate layers of potato and onion in a casserole dish until several layers are complete.

Step 3Dot the top with crushed garlic. Set aside.

Step 4Microwave butter for 30 seconds. Stir in flour and microwave for 1 minute.

Step 5Gradually stir in 1 cup of milk and the spices.

Step 6Microwave on high for 2 minutes stirring every minute. Do not allow it to thicken, and add more milk if required.

Step 7Stir in the Swiss and parmesan cheeses.

Step 8Pour the cheese sauce over the potato and onion.

Step 9Cover the casserole and place on middle shelf in the oven and bake for 20 minutes.

Step 10Remove and spread the tasty cheese evenly across the top of the bake.

Step 11Return to the oven and bake, uncovered, for 10-15 minutes, or until the cheese topping browns.

Step 12Remove and set aside to cool slightly before serving.
Recipe Notes
It is important that your cheese sauce be free running when added to the potato and onion mix - you do not want a thick or 'gluggy' cheese sauce mixture.
Salt-reduced butter may be substituted.
