Ingredients

  • 700 g potato peeled thinly sliced
  • 2 onion medium thinly sliced
  • 1 1/2 cup tasty cheese grated
  • 1/4 tsp garlic crushed
  • 75 g butter
  • 2 tbs plain flour
  • 1 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 pinch pepper
  • 1/4 cup Swiss cheese
  • 1 tbs parmesan cheese grated

Method

  • Step 1
    Preheat oven to 220C (200C fan forced).
  • Step 2
    Place alternate layers of potato and onion in a casserole dish until several layers are complete.
  • Step 3
    Dot the top with crushed garlic. Set aside.
  • Step 4
    Microwave butter for 30 seconds. Stir in flour and microwave for 1 minute.
  • Step 5
    Gradually stir in 1 cup of milk and the spices.
  • Step 6
    Microwave on high for 2 minutes stirring every minute. Do not allow it to thicken, and add more milk if required.
  • Step 7
    Stir in the Swiss and parmesan cheeses.
  • Step 8
    Pour the cheese sauce over the potato and onion.
  • Step 9
    Cover the casserole and place on middle shelf in the oven and bake for 20 minutes.
  • Step 10
    Remove and spread the tasty cheese evenly across the top of the bake.
  • Step 11
    Return to the oven and bake, uncovered, for 10-15 minutes, or until the cheese topping browns.
  • Step 12
    Remove and set aside to cool slightly before serving.
Recipe Notes
It is important that your cheese sauce be free running when added to the potato and onion mix - you do not want a thick or 'gluggy' cheese sauce mixture. Salt-reduced butter may be substituted.
