This dish is very nice served with rice.
Ingredients
- 600 g diced pork fat trimmed
- 1 cup cornflour
- 1 tbs oil
Marinade
- 2 tsp sugar
- 1 1/2 tbs soy sauce
- 1 egg yolks
- 1/4 tsp bicarbonate of soda
Vegetables
- 1 onion sliced
- 1 celery stick sliced
- 1 capsicum cut into pieces
- 1 carrot thinly sliced
- 400 g canned pineapple reserve liquid
Sauce
- 1/4 cup white vinegar
- 2 tbs tomato sauce
- 1 cup water
- 1 chicken stock cube
- 1 1/2 tbs cornflour
Method

Step 1Put meat in marinade for at least 1 hour. Stir and coat the meat with the marinade occasionally.

Step 2Drain meat and reserve any leftover marinade.

Step 3Toss meat in cornflour.

Step 4Heat oil and cook meat until browned. Remove from pan.

Step 5Vegetables: Saute onion, celery, capsicum and carrot. Add drained pineapple.

Step 6Mix sauce ingredients, reserved liquid from canned pineapple and leftover marinade then add to vegetables.

Step 7Stir then add cooked meat. Heat through and serve.

Although this recipe looks like a lot of things to do it really isn't and is well worth any bother. I'm sure you will enjoy it as well! Sometimes I add Pandaroo brand 'Chow Mein Chinese Noodles' to the wok near the end of cooking.
