Ingredients

  • 4 cup self-raising flour
  • 2 tbs baking powder
  • 1 tsp salt
  • 2 tsp caster sugar
  • 60 g butter
  • 2 cup milk

Method

  • Step 1
    Pre heat oven to 200C.
  • Step 2
    Sift flour, baking powder and salt together in a bowl.
  • Step 3
    Rub in the butter with tips of fingers until mixture resembles fine breadcrumbs.
  • Step 4
    Add caster sugar and then pour in all of the milk at once.
  • Step 5
    Stir with a butter knife until well combined.
  • Step 6
    The mixture will be quite sticky.
  • Step 7
    Scrape the mixture onto a floured board, sprinkle with a little extra flour and knead.
  • Step 8
    Add a little more flour if still too sticky.
  • Step 9
    Roll out to 2½ cm thick and use a 6 cm scone cutter to cut out.
  • Step 10
    Place close together onto a tray lined with baking paper.
  • Step 11
    Cook in a preheated oven for 10-12 minutes until pale golden in colour.
  • Step 12
    Remove from oven and cool on a wire rack.
Recipe Notes

Lovely with jam and cream. Do not use a glass as a cutter or they will not rise well.
