Ingredients

  • 1 1/2 cups (150g) rolled oats
  • 1 cup (150g) wholemeal plain flour
  • 1/2 cup (40g) desiccated coconut
  • 100g butter
  • 1/3 cup rice malt syrup
  • 1 tsp bicarb soda
  • 2 tbsp boiling water

Method

  • Step 1
    Preheat oven to 180°C/160°C fan forced. Line 2 x baking trays with baking paper.
  • Step 2
    Combine oats, flour and coconut in a large bowl.
  • Step 3
    Place remaining ingredients in jug and stir until combined. Pour into dry ingredients and mix to combine. Take level tablespoons (aprox 20g) of mixture and roll into balls. Place on a baking tray 5cm apart and flatten slightly, repeat with remaining mixture.
  • Step 4
    Bake trays of biscuits for 12-15 minutes or until golden. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
