Enjoy all the flavour of crispy ANZAC biscuits, but with much less sugar.
Ingredients
- 1 1/2 cups (150g) rolled oats
- 1 cup (150g) wholemeal plain flour
- 1/2 cup (40g) desiccated coconut
- 100g butter
- 1/3 cup rice malt syrup
- 1 tsp bicarb soda
- 2 tbsp boiling water
Method

Step 1Preheat oven to 180°C/160°C fan forced. Line 2 x baking trays with baking paper.

Step 2Combine oats, flour and coconut in a large bowl.

Step 3Place remaining ingredients in jug and stir until combined. Pour into dry ingredients and mix to combine. Take level tablespoons (aprox 20g) of mixture and roll into balls. Place on a baking tray 5cm apart and flatten slightly, repeat with remaining mixture.

Step 4Bake trays of biscuits for 12-15 minutes or until golden. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
