The delicious strawberry and white chocolate muffins are great to have with an afternoon cup of tea.
Ingredients
- 3 eggs
- 1 cup caster sugar
- 1 1/2 cups cream
- 2 cups self-raising flour
- 1 tsp vanilla essence
- 1 punnet fresh strawberries cut into pieces
- 300g white chocolate melts
Method

Step 1Beat eggs and sugar together. Add 1 cup of cream and vanilla.

Step 2Fold in flour and strawberries.

Step 3Melt white chocolate and add to mixture, mix until combined. Add remaining cream if mix is dry or not very smooth.

Step 4Place into muffin trays and bake at 180C for 15-20 minutes.
Recipe Notes
Best served warm with a dollop of whipped cream and strawberry on top.
