Ingredients

250g cream cheese
100ml thickened cream
4 tbs icing sugar
2x 190g shortbread biscuit packets
1 tbs vanilla essence
4 strawberries

Method

Step 1

Combine cream cheese, vanilla essence, thickened cream, icing sugar and strawberries in a large bowl. Mix with a hand held mixer until smooth.
Step 2

Spread some of the strawberry cheesecake mixture onto a shortbread biscuit and sandwich another on top. Serve immediately.
