Sweet, moist and delicious - these lamb cutlets won't disappoint!
Ingredients
- 4 lamb racks
- 1/3 cup honey
- 1 tbs wholegrain mustard
- 1 tbs fresh rosemary finely chopped
- 2 garlic clove minced
Method

Step 1In a small saucepan, combine the honey, mustard, rosemary and garlic. Place on stove and stir over a medium heat until mixture comes to a boil. Allow to cool slightly.

Step 2Trim excess fat from lamb. Place racks in a glass bowl and pour marinade over, turning racks to coat. Leave for 30 minutes to marinate.

Step 3Preheat oven to 200C degrees. Cover bones with foil to prevent burning. Place lamb racks in a medium frying pan and cook over high heat for 2 minutes each side, basting with excess marinade. Remove from frying pan and place in a oven dish and cook in oven for 25 minutes or until cooked to your liking.

Step 4Racks can be served as is, or sliced individually and served with your favourite salad.
