Ingredients

  • 4 lamb racks
  • 1/3 cup honey
  • 1 tbs wholegrain mustard
  • 1 tbs fresh rosemary finely chopped
  • 2 garlic clove minced

Method

  • Step 1
    In a small saucepan, combine the honey, mustard, rosemary and garlic. Place on stove and stir over a medium heat until mixture comes to a boil. Allow to cool slightly.
  • Step 2
    Trim excess fat from lamb. Place racks in a glass bowl and pour marinade over, turning racks to coat. Leave for 30 minutes to marinate.
  • Step 3
    Preheat oven to 200C degrees. Cover bones with foil to prevent burning. Place lamb racks in a medium frying pan and cook over high heat for 2 minutes each side, basting with excess marinade. Remove from frying pan and place in a oven dish and cook in oven for 25 minutes or until cooked to your liking.
  • Step 4
    Racks can be served as is, or sliced individually and served with your favourite salad.
