Ingredients
- 750 g beef steak
Marinade
- 2 tbs dijon mustard
- 1 tbs vegetable oil
- 1 pinch oregano
- 1 pinch salt
- 1 pinch white pepper
- 1 pinch mixed herbs
Sauce
- 15 ml oil
- 1 tbs plain flour
- 1 cup chicken stock (liquid)
- 3 tbs dijon mustard
- 50 ml cognac
- 1 pinch oregano
- 1 pinch white pepper
- 1 pinch mixed herbs
- 4 tbs creme fraiche
Method

Step 1Mix marinade ingredients with steak in a bowl. Cover and refrigerate for five hours or overnight.

Step 2Fry the steaks. Set aside.

Step 3Sauce: In a saucepan, heat the oil until hot, then add the flour and mix well.

Step 4Add the stock and stir.

Step 5Add the mustard, cognac, white pepper, oregano, and herbs and bring to the boil.

Step 6Add the creme fraiche or thick cream and heat.

Step 7Add the sauce to steak and serve with French fries or potato wedges.
Recipe Notes
You can use a mix of ordinary mustard and Dijon mustard.
