Ingredients

  • 200g dark chocolate
  • 100g butter
  • 100g rainbow mini marshmallows
  • 1/4 cup desiccated coconut

Method

  • Step 1
    Melt chocolate and butter in a bowl placed over a saucepan of simmering water. Alternatively, you can melt it in bursts in the microwave. Allow to cool, then add marshmallows and stir to combine.
  • Step 2
    Tip out onto a large piece of baking paper and when it starts to harden, roll up into a log shape approximately 24cm long. Twist the ends of the baking paper and refrigerate the log for at least 4 hours until it has set completely. You can speed this process up by freezing it instead. Once set, unwrap the log. Sprinkle coconut on a clean tray and roll the log in the coconut to coat. Cut into 1cm slices.
Recipe Notes

+ 4 hrs setting.

Make sure the chocolate has set completely or you won’t be able to cut cleanly through the slice to reveal the marshmallows. Pop it in the freezer if necessary.

Rainbow mini marshmallows are available in the baking section of the supermarket.
