A fantastic combination, great for the BBQ.
Ingredients
- 100 g short-cut bacon rashers diced
- 1 red onion small thinly sliced
- 100 g button mushrooms sliced
- 250 g cherry tomato halved
- 12 leaves spinach medium shredded
- 200 g Greek fetta cubed
- 100 g toasted walnuts
Dressing
- 1/2 cup orange juice
- 1/4 cup olive oil
- 1/4 cup parsley finely chopped
Method

Step 1Pan fry bacon until crisp, then drain on absorbent paper.

Step 2Combine bacon, onion, mushrooms, tomatoes, spinach, fetta and walnuts in a large bowl.

Step 3Combine orange juice, oil and parsley in a screw top jar and shake well.

Step 4Just before serving, pour over salad.
