Ingredients

  • 100 g short-cut bacon rashers diced
  • 1 red onion small thinly sliced
  • 100 g button mushrooms sliced
  • 250 g cherry tomato halved
  • 12 leaves spinach medium shredded
  • 200 g Greek fetta cubed
  • 100 g toasted walnuts

Dressing

  • 1/2 cup orange juice
  • 1/4 cup olive oil
  • 1/4 cup parsley finely chopped

Method

  • Step 1
    Pan fry bacon until crisp, then drain on absorbent paper.
  • Step 2
    Combine bacon, onion, mushrooms, tomatoes, spinach, fetta and walnuts in a large bowl.
  • Step 3
    Combine orange juice, oil and parsley in a screw top jar and shake well.
  • Step 4
    Just before serving, pour over salad.
