Ingredients

  • 250 g frozen spinach chopped
  • 2 cup gluten-free self-raising flour
  • 1/2 tsp ground nutmeg
  • 1 cup cheddar cheese grated
  • 60 g fetta crumbled
  • 1 cup milk
  • 1 egg

Method

  • Step 1
    Preheat oven to 210C.
  • Step 2
    Combine flour, nutmeg and cheeses in a bowl.
  • Step 3
    Make a well and add the combined egg and milk.
  • Step 4
    Mix it together and then added the drained spinach.
  • Step 5
    Bake in greased mini muffin pans for 10-15 minutes until golden.
Recipe Notes
I make these with White Wings gluten free self raising flour. They have a bit more of a chewy texture which is quite enjoyable.
