Yummy bite size muffins, great for the lunch box.
Ingredients
- 250 g frozen spinach chopped
- 2 cup gluten-free self-raising flour
- 1/2 tsp ground nutmeg
- 1 cup cheddar cheese grated
- 60 g fetta crumbled
- 1 cup milk
- 1 egg
Method

Step 1Preheat oven to 210C.

Step 2Combine flour, nutmeg and cheeses in a bowl.

Step 3Make a well and add the combined egg and milk.

Step 4Mix it together and then added the drained spinach.

Step 5Bake in greased mini muffin pans for 10-15 minutes until golden.
Recipe Notes
I make these with White Wings gluten free self raising flour. They have a bit more of a chewy texture which is quite enjoyable.
