A quick and tasty weeknight meal. This dish highlights the delicious prawns and is really easy to prepare.
Ingredients
- 125 g vermicelli pasta
- 16 raw prawns deveined peeled
- 1 tbs olive oil
- 1 brown onion finely chopped small
- 1 tbs garlic paste
- 1 tbs ginger paste
- 1 long red chilli seeds removed finely sliced
- 1 cup cherry tomato quartered
- 1/2 cup fresh Italian parsley chopped
- 1/2 cup fresh coriander chopped
- 1/2 cup parmesan
- 1/2 tsp salt *to taste
- 1/2 tsp pepper *to taste
Method

Step 1Cook noodles in a saucepan of boiling water following packet directions, or until al dente. Drain, but keep 2 tablespoons of the pasta water aside in a small bowl to use in the sauce.

Step 2Heat oil in a large frying pan over medium heat. Add onion, garlic, ginger and chilli and cook for about 1 minute, or until the onions soften. Add the prawns and cook for 2-3 minutes or until opaque. Add the tomatoes and cook for a further minute.

Step 3Add in the reserved pasta water, parmesan cheese, spaghetti and coriander. Toss for 2 minutes, or until heated through. Season with salt and pepper. Serve immediately.

Recipe Notes
You can use frozen prawns or fresh ones that are already peeled to save on time. For frozen smaller prawns serve 8 per person or for fresh large prawns serve 5 per person.
If you like it extra spicy leave in the chilli seeds.
