If you're looking for a boiled fruit cake to make, try this old-fashioned recipe. It makes use of a spiced ginger beer that is only available during the festive season, and the resulting cake is moist and delicious!
Ingredients
- 1kg Woolworths Mixed Fruit
- 375ml spiced ginger beer
- 3/4 cup (95g) caster sugar
- 250g butter
- 4 eggs lightly beaten
- 2 cups self-raising flour
- 2 tsp mixed spice
- 2 tsp nutmeg
- 30ml brandy, optional

Step 1Place mixed fruit, sugar, butter and spiced ginger beer in a deep saucepan. Bring to the boil then reduce to a slow simmer to allow the butter to melt and the sugar to dissolve. Turn off the heat. Add nutmeg and mixed spice and mix well. Remove from heat and allow to cool for 30 minutes to reach room temperature.

Step 2Preheat oven to 140C. Grease a 20cm springform cake tin. Line the base and sides with 2 layers of baking paper.

Step 3Once the fruit mixture has cooled, add half the flour. Mix, add a little more flour and the eggs, and the remaining flour. Mix until everything is incorporated and pour into the prepared springform tin. Bake at 140 C for 2 and 15 minutes or until a skewer inserted into the centre comes out clean. Brush with brandy while it is still warm.
