Ingredients

  • 1 tbsp olive oil
  • 2 rashers bacon, roughly chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil, roughly chopped
  • Pink salt flakes, to taste
  • Ground pepper, to taste
  • 3 eggs
  • Mozzarella or feta cheese

Method

  • Step 1
    Preheat pan on medium heat for 5 minutes, and preheat oven to 180 C.
  • Step 2
    Add oil to pan. Add bacon and fry until browned. Add cherry tomatoes and basil and fry for a minute. Season to taste with salt and pepper.
  • Step 3
    Break the eggs and drop from a height into the pan. Ensure they are evenly spaced around the pan. Cook for 2-3 minutes until eggs are nearly done. Sprinkle with grated mozzarella or crumbled feta.
  • Step 4
    Remove the pan from the stove and place in oven until the cheese has melted and is golden brown. Serve with a slice of hot, buttered sourdough toast.
