Ingredients

  • 300 g unsalted butter softened
  • 80 g icing sugar
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 50 g cornflour
  • 1/2 cup icing sugar *to decorate

Biscuit Icing

  • 50 g unsalted butter
  • 100 g icing sugar
  • 1 tsp vanilla extract

Method

  • Step 1
    Preheat oven to 160C.
  • Step 2
    Line two oven trays with baking paper. Cream Butter, Icing Sugar and Vanilla for 3 minutes on high until very light and creamy.
  • Step 3
    Sift Flours together, then fold into creamed mixture until just combined.
  • Step 4
    Pipe dough onto tray with a medium size star shaped nozzle or using 2 teaspoons of dough per ball, roll dough into balls and put onto trays, flatten with a floured fork, leaving a little space in-between.
  • Step 5
    Bake for 15-25 minutes or until lightly golden. Cool completely on wire racks.
  • Step 6
    Icing- Put Butter, Icing Sugar and Vanilla in the bowl of an electric beater and beat until creamy.
  • Step 7
    Sandwich cooled biscuits together with icing and dust with icing sugar. Serve & enjoy!

Recipe Notes
The dough can be quite sticky, which is why piping makes it a lot easier plus it looks much nicer. Otherwise, just flour your hands and roll dough.
