Ingredients

  • 1/2 cup raw cashews soaked overnight
  • 1/2 cup raw walnuts soaked overnight
  • 1 cup nutritional yeast
  • 2 tbs onion powder
  • 1 tbs garlic powder
  • 3 cup unsweetened soy milk
  • 3 tbs agar-agar
  • 3 tbs white miso paste
  • 3 tbs lemon juice
  • 1 tsp liquid smoke
  • 1 tsp smoked paprika
  • 3 tsp wasabi paste
  • 3 tsp black sesame seeds
  • 2 tsp black pepper
  • 1/3 cup sunflower oil

Method

  • Step 1
    Add the nuts, without the water, to a food processor and process until fine grated. Add the oil, this will work better to process the nuts!
  • Step 2
    Add the soy milk to a saucepan and heat slowly over low heat.
  • Step 3
    Mix the miso paste with some soy milk to turn it into more of a liquid. Dissolve the agar agar powder with some water to make more of a paste.
  • Step 4
    Add the lemon juice, miso paste, nutritional yeast flakes, wasabi, liquid smoke and the dissolved Agar Agar to the soy milk and bring it to the boil for approximately 5 seconds. Turn off the heat and stir constantly for about 1 to 2 minutes.
  • Step 5
    When ready, add to the food processor and process with the nut-mix until smooth and creamy. Prepare your cups or whatever you want to use to form your cheese, brush with some extra oil and add the black sesame seeds and freshly grated black pepper to the cups. Spread well around. Add the cheese paste and allow it to cool in cups. Refrigerate over night.

Recipe Notes
You can buy nutritional yeast flakes from Coles, health food stores and organic food stores. You can swap the white miso paste for dark.
