This is very yummy and good lunch.
Ingredients
- 6 eggs room temperature
- 250 g light spreadable cream cheese
- 1/4 cup seafood cocktail sauce
- 1 green onion thinly sliced
- 6 croissants cut lengthways
- 200 g smoked salmon sliced
Method

Step 1Preheat oven to 170C degrees or 150C fan forced.

Step 2Place eggs in a saucepan and cover with cold water. Bring to the boil over moderate heat. Boil for 8 -10 minutes. Drain water and cool eggs under cold water. Peel eggs and chop into pieces.

Step 3Combine cream cheese, seafood sauce and green onion in a bowl. Stir in eggs and season with salt and pepper.

Step 4Place croissants on a baking tray and bake for 5 minutes or until heated and crisp.

Step 5Spoon egg mixture on to croissant bases. Top with slices of smoked salmon and sandwich with croissant tops. Serve on a plate.
