Smoked Salmon and Egg Croissants

Ingredients

  • 6 eggs room temperature
  • 250 g light spreadable cream cheese
  • 1/4 cup seafood cocktail sauce
  • 1 green onion thinly sliced
  • 6 croissants cut lengthways
  • 200 g smoked salmon sliced

Method

  • Step 1
    Preheat oven to 170C degrees or 150C fan forced.
  • Step 2
    Place eggs in a saucepan and cover with cold water. Bring to the boil over moderate heat. Boil for 8 -10 minutes. Drain water and cool eggs under cold water. Peel eggs and chop into pieces.
  • Step 3
    Combine cream cheese, seafood sauce and green onion in a bowl. Stir in eggs and season with salt and pepper.
  • Step 4
    Place croissants on a baking tray and bake for 5 minutes or until heated and crisp.
  • Step 5
    Spoon egg mixture on to croissant bases. Top with slices of smoked salmon and sandwich with croissant tops. Serve on a plate.
