These are easy and make great finger food and canapes.
Ingredients
- 1/2 cup self-raising flour
- 1 egg yolk
- 1/2 cup milk
- 1 1/2 tbs fresh dill
- 80 g smoked salmon sliced
- 1 tbs fresh dill *to serve
Topping
- 0.6 cup mascarpone
- 2 tsp wholegrain mustard
Method

Step 1Sift flour into bowl and gradually whisk in combined egg yolk, milk and dill.

Step 2Whisk until smooth. Drop teaspoons of mixture into greased pan and cook until bubbles appear.

Step 3Turn pikelets, brown on other side and cool on wire rack.

Step 4Spoon over topping, top with smoked salmon and extra dill.

Step 5Topping: Combine cheese and mustard. Mix well.
