Ingredients

  • 1/2 cup self-raising flour
  • 1 egg yolk
  • 1/2 cup milk
  • 1 1/2 tbs fresh dill
  • 80 g smoked salmon sliced
  • 1 tbs fresh dill *to serve

Topping

  • 0.6 cup mascarpone
  • 2 tsp wholegrain mustard

Method

  • Step 1
    Sift flour into bowl and gradually whisk in combined egg yolk, milk and dill.

  • Step 2
    Whisk until smooth. Drop teaspoons of mixture into greased pan and cook until bubbles appear.
  • Step 3
    Turn pikelets, brown on other side and cool on wire rack.
  • Step 4
    Spoon over topping, top with smoked salmon and extra dill.
  • Step 5
    Topping: Combine cheese and mustard. Mix well.
Recipe Notes

I add capers to the topping to even out flavour.
