Ingredients

  • 1 pizza base
  • 2 tbs pizza sauce
  • 150 g smoked salmon cut into strips
  • 1/4 Spanish onion diced
  • 1 tbs capers
  • 1 avocado sliced
  • 1/2 cup baby spinach
  • 1/3 cup pizza cheese
  • 2 tbs light sour cream

Method

  • Step 1
    Preheat oven to 220C (200C fan forced).
  • Step 2
    Spread pizza sauce over the pizza base using a pastry brush.
  • Step 3
    Cover base with baby spinach leaves.
  • Step 4
    Evenly distribute remaining ingredients, except the cheese and the sour cream.
  • Step 5
    Sprinkle the cheese over the other ingredients.
  • Step 6
    Bake on middle rack of oven for 20-25 minutes or until the cheese has melted.
  • Step 7
    Remove from oven and dollop with the sour cream.
Recipe Notes

I prefer to use wholemeal Lebanese bread style bases for a crispier result. This recipe allows for a light cheese coverage.

A blend of mozzarella, tasty and Parmesan cheese can be used.
