A light and healthy pizza perfect for lunch, dinner or a snack.
Ingredients
- 1 pizza base
- 2 tbs pizza sauce
- 150 g smoked salmon cut into strips
- 1/4 Spanish onion diced
- 1 tbs capers
- 1 avocado sliced
- 1/2 cup baby spinach
- 1/3 cup pizza cheese
- 2 tbs light sour cream
Method

Step 1Preheat oven to 220C (200C fan forced).

Step 2Spread pizza sauce over the pizza base using a pastry brush.

Step 3Cover base with baby spinach leaves.

Step 4Evenly distribute remaining ingredients, except the cheese and the sour cream.

Step 5Sprinkle the cheese over the other ingredients.

Step 6Bake on middle rack of oven for 20-25 minutes or until the cheese has melted.

Step 7Remove from oven and dollop with the sour cream.
Recipe Notes
I prefer to use wholemeal Lebanese bread style bases for a crispier result. This recipe allows for a light cheese coverage.
A blend of mozzarella, tasty and Parmesan cheese can be used.
