Turn on the slow cooker in the morning and come home to tender, melt-in-your mouth lamb shanks for a cold night.
Ingredients
- 4 lamb shanks fat trimmed
- 45g vegetable soup mix
- 400g canned diced tomato
Method

Step 1Brown shanks in a pan, transfer to slow cooker bowl, sprinkle over soup and add tomatoes.

Step 2Cook on high 4 hours or low for 8 hours.

Step 3Check during cooking and if needed, add a small amount of hot water.
